How to make biscuits?

Easy step by step recipe for homemade biscuits:

BASIC INGREDIENTS:

To prepare some basic homemade cookies, you only need flour, butter , egg, sugar, yeast and a pinch of salt in the right amounts that each recipe marks for you . Use them as fixed ingredients and then try changing the type of flour or adding flavorings (vanilla, orange, banana …), nuts, dried fruit, caramel, jam , chocolate, etc. You can put them inside the dough or outside of it; some elements are even ideal for the final frosting.

HOW TO MAKE COOKIE DOUGH:

Process the butter, always at room temperature, and the sugar until both ingredients are integrated and obtain a creamy texture. Add the egg and mix. Incorporate the sifted flour and yeast and mix until you have a homogeneous dough, without handling it or kneading it excessively. Make a ball, wrap it with plastic wrap and let it rest in the fridge for a minimum of 1 hour, although the best result is to leave it for 3 or 4.

SHAPING YOUR COOKIES:

Stretch the dough with a rolling pin on a surface that we recommend sprinkling with icing sugar better than flour (and thus avoid an excess of this ingredient and the hardening of the result) and proceed to cut your cookies leaving a medium thickness (half a centimeter).

For this you can use some type of mold (there are a thousand shapes and sizes) or if you want to make them round, the edge of a glass will suffice. Flour them so that the cookies come off better when cutting them. Take advantage of the cutouts to re-shape, stretch and cut. There is also another trick so that the dough does not stick to the rolling pin, which is to place it on 2 baking sheets and stretch it. And, if you want a rustic version, make balls with the dough and flatten them.

OVEN TIME AND TEMPERATURE:

Preheat the oven to 180ºC 10 minutes before. Place the cookies on a paper tray or silicone mat. Bake them, with heat up and down, in the center, for about 8-10 minutes without opening the oven door , remove them and let them rest for about 15 minutes. If you make them thicker, you will need another minute of cooking.

DECOR:

You can leave your homemade cookies as is or apply a coating or glaze, which is nothing more than a mixture of icing sugar and water or lemon juice and, sometimes, also egg white, as is or with some type of coloring and/or flavoring. If you are going to enrich them with one of these options, wait until they have cooled to obtain a more compact and much more visually appealing result.
