New York, New York – For a limited time last December, confection connoisseurs could sample a unique fusion of Cuban and American pastry traditions: the Guava and Cream Cheese doughnut.
The creation was the result of a collaboration between gourmet chef Solanki Roy of India and prominent food writer Marisel Salazar of Latin America. The two combined their talents to blend Salazar’s memories of classic Cuban recipes with an NYC flair.
While considered an unusual combination here in the US, the combination of pastelito de guayaba y queso (guava and cream cheese) in a pastry is a staple in Cuba. The Dough version was made with brioche dough, filled with guava, and topped with a semi-sweet cream cheese glaze. A portion of the proceeds from the sale of these pastries was donated to NYC-based Cornelia Connelly Center (CCC), a non-profit organization serving under-resourced girls in the New York City area.
Solanki has already created other speciality limited-edition doughnuts, such as the Chocolate Mosaic doughnut for Father’s Day was featured by Barry Callebaut, featuring milk chocolate and semi-sweet chocolate mosaic shards, in collaboration with famed Belgium company Callebaut chocolate. She also created the Baklava Cheesecake Doughnut, topped with cheesecake frosting, flaky baklava, and walnut crunchies, to commemorate Dough Doughnuts’ 1-year Astoria Anniversary.

Solanki Roy is a gourmet chef who has worked at Eleven Madison Park (3 Michelin stars), Gaggan (2 Michelin stars), and served as the Executive Sous Chef at the Mark Restaurant by Jean-Georges. She was formerly the culinary director of Dough.
A few fun flavors she created at Dough are Lychee rose, Matcha cheesecake, Champagne, Ube Cheesecake (in collaboration with Food writer, author, and chef Jen Balisi), Chocolate Chai for Diwali, Strawberry Sakura Blossom, Mandarin, Savaronut, Chocofeller, Valentine’s Day heart-shaped donut collections, Raaka Chocolate special edition donut (Pumpkin swirl and strawberry),. She also created the Kiev Cake Donut for Dough’s contribution to Baranova and World Central Kitchen.
